Halo Beriti washing station, established in 2014, works with around 750 smallholder producers who deliver coffee as cherry. this lot is part of a ‘special preparation’ process, in which hand-sorting was done repeatedly throughout receiving and the drying process to ensure only the highest-quality coffees made it into the bags. like much of Ethiopia, coffee is grown on very small plots and processed centrally at washing stations, where cherries from many producers are blended into day lots. farmers in the region typically grow coffee without fertilisers or pesticides.
