Ernelio Ortiz owns and manages Finca El Pedrero, a 12-hectare coffee farm in Honduras’ Montecillos region, where sustainability, quality, and traceability are central to his work. With around 56,000 coffee trees—mainly Catuai and IHCAFE 90—grown alongside avocado trees, Ernelio credits environmentally responsible farming for improving both the land and his family’s livelihood. His focus on quality includes meticulous harvesting, sorting, and an intentional anaerobic fermentation process that enhances fruit intensity, acidity, and body in the cup. As natural-processed specialty coffees from Honduras gain global recognition, Ernelio remains committed to innovation and transparency to meet the growing demand for traceable, high-quality coffee.
